Lambrusco comes in two flavors: sweet and dry. The origins of Opera di Ca’ Montanari can be traced back to organically farmed fruit in the heart of Modena. This wine is said to have strawberry flavors, elderflower notes, and black cherry notes. This bottle of lambrusco should provide a strong and consistent expression of the grape. This organically farmed wine is produced in Castelvetro by growing grapes on red clay soils. It’s jam-packed with a flavor of ripe cherries, raspberries, and cream. This bottle of lambrusco is one of the best in the world. Lambruscos are typically low in ABV and can be consumed at almost any time of day. In northern Italy, it is primarily produced in the province of Emilia-Romagna. Lambrusco is a red wine made from grape vines grown in Italy that is slightly sparkling (frizzante) in color. Lambrusco wine is best served chilled and goes well with a variety of foods, such as pizza, pasta and grilled meats. It is then left to age for at least a month before being consumed. After fermentation is complete, the wine is bottled and corked. The tank is then sealed and left to ferment for a period of time, typically around two weeks. Once the juice has been extracted, it is placed in the fermentation tank. This can be done using a wine press or by crushing the grapes by hand. This allows for a higher level of carbonation to be achieved. Lambrusco wine is traditionally made using the Charmat method, which involves fermenting the wine in large tanks for a period of time before bottling it. Lambrusco wine is known for its fruity, slightly sweet taste and its high level of carbonation. It is made from a variety of grapes, the most common being Lambrusco Grasparossa, Lambrusco Maestri and Lambrusco Salamino. All this in order to shorten the time of contact between must and peels, obtaining the maximum extraction of colouring and aromatic substances contained in the peels. In order to obtain this it is necessary to follow very carefully the evolution of the products during the maceration, by using a winemaking technique that allows the intervention on the fermentation temperature and on the soft handling of surface marks. Exclusively produced in the sparkling version by the Bassi winery, it stands out for the integrity of fragrances and the primary aromas. The bunch of grapes is medium sized, cone-pyramid shaped with a very evident wing these medium-sized grapes, which have blue-black peels, very pruinose, thick and coriaceous, and the juice rich in acid make the variety suitable for the production of new wine. TECHNICAL NOTES: This variety has a long phenolic cycle, in fact, although it buds early (08- 15/04) fruits ripen fairly late (01-15/10). The low production imposed on grapevines and the careful agronomic choices contribute to increase the grapes’ quality. The Bassi winery has chosen to grow this variety, “grasparossa” selection, in the clayey and fertile soils of Sala Bolognese, following the typical habitat of the Modena plain area. This type of wine is the one that mostly needs the “CRUS” discipline, also in its sweet version, given the extreme diversity of products that can be obtained from the same grapevine.
